Pesto Tilapia



This is one of Brad and mine's favorite "recipes". It is incredibly simply but is a great way to transform plain boring (and cheap) tilapia into a flavorful and super healthy meal. Using store bought pesto is the easiest route but certainly not the tastiest. If you have a recipe for pesto you love use it! (and share with me because I have not found one I am happy with)


I used frozen tilapia because it is so unbelievably cheap. Put however much you want in the fridge the night before you want to make this so it is ready to go when you are.

4 tbsp pesto
4 tilapia filets
4 tbsp breadcrumbs


Preheat oven to 375
Line shallow casserole dish with tinfoil and spray with Pam
Place tilapia filets in dish and spread 1 tbsp of pesto on top of each
Bake in oven for 10-15 minutes until fish is white and flaky
Sprinkle each filet with 1 tablespoon bread crumbs
Turn oven broiler on and put fish back in oven
Broil for 1-3 minutes until crumbs are lightly browned (watch closely so the crumbs do not burn, some broilers are a lot more powerful than others)
Serve filets on top of sauteed spinach or orzo alongside Artichoke and Mushroom Sautee
