Baked Zucchini


This is an incredibly easy side dish that I like to make when the main meal is a little more complicated. Baking zucchini brings out their unique earthy flavor and natural sweetness.

Zucchini are great to season with absolutely anything so be creative and have it compliment your entree perfectly.

4 medium/small zucchini
1 tsp italian seasoning blend
(or any seasoning such as cajun, lemon juice, red pepper flakes, curry powder, etc... )
Pam
pinch of salt

I like to cook these at a low temperature for a "long" time so their natural sweetness is really brought out but if you are in a hurry, higher heat for a shorter time yields  delicious results as well.

Preheat oven to 350F

Wash your zucchini, slice the ends off and discard

Slice each zucchini into rounds about 1/8 of an inch thick
Try to get them as evenly sized as possible

Spray a large tinfoil covered baking sheet with Pam
Put zucchini on sheet so that all of them are touching the tinfoil and are not overlapping too much

Sprinkle seasoning on top, and spray lightly with Pam or olive oil

Put in oven and bake for 15-20 minutes stirring once, until the zucchini are tender
Sprinkle a pinch of salt on top and serve
