This Asian inspired wrap is perfect for lunch. It is super tasty and chocked full of protein to keep your tummy full until dinner. The vegetables are interchangeable just use your favorite stir fry veggies or whatever you have on hand.

Shredded BBQ Pork
This takes a long time to cook but the result is really worth it and the amount of work you actually have to do is very minimal. I like to prepare it the night before, stick my crock pot bowl in the fridge overnight and start it in the morning. Coming home to the way this smells is a very nice way to end the day.
Whole Wheat Oatmeal Muffin
I made these wonderful hearty and very low fat muffins on Sunday this past weekend and I have been eating them for breakfast everyday since then. I froze 8 of them and I am anxiously awaiting their thawing so I can eat the rest. You can add anything you want to this recipe, it is very forgiving. Dried fruits, fresh fruits (like mashed banana), peanut butter, nuts, just about anything would make a great add-in to this recipe.

Mushroom and Spinach Manicotti
So cheesy, hearty, and delicious you won't miss the meat , I promise. It does take awhile and is a bit messy so start early. It is definitely worth the time, especially since you will get about 4 meals out of the leftovers. The manicotti go into the oven uncooked so filling them is much easier than if you were to cook them first. Feel free to use the cheese filling simply as a base and add your own favorite vegetables, meats, and herbs etc.
