Roasted Red Pepper Hummus & Giveaway Winners!


I have a bad habit. One that I like to call "watching educational television". I absolutely love the programs on HGTV, TLC, and of course just about anything on the Food Network. I watch these shows all day on the weekends whilst cleaning, cooking, and eating. The only way I can justify my weekly 4 hour International House Hunters marathon is to say I am doing future vacation research, and those 5 daily episodes of What Not to Wear? Well, I will be entering the corporate world soon and I would hate to not know how long the crotch of my pants should be or if ruffles on my shirt are okay. See...educational!

Most of the time these shows are on in the background while I cook and during those blissful moments of T.V. watching I usually create some of my most delicious recipes. This was no exception.

Protein packed chickpeas, earthy roasted red peppers, and a healthy serving of garlic make this a perfect dip for vegetables or hearty whole wheat pita bread. I really enjoy taking it to school for lunch or having it in the afternoon for a snack.

1 15 oz can no-salt added chickpeas
2-3 tbsp reserved chickpea water
1 1/2 tbsp sesame tahini
1-2 roasted red peppers packed in water (I like Mediterranean Organic but any kind would do)
1 medium clove of garlic, peeled
1/2 tsp salt
2 tbsp lemon juice
1/2 tsp olive oil

Combine all ingredients but the reserved bean water in a food processor and pulse

If your hummus is not coming together or seems too dry add the bean water little by little while pulsing and scraping the sides until it is the consistency you want, I usually end up adding about 2 tbsp to get it the way I like

Taste and adjust seasoning accordingly

Keep in the fridge

This recipe made enough hummus to get me through 5 lunches and a few snacks so it makes quite a bit

Servings 6
Per serving (a generous 1/4 cup) 110 calories

  5. When we were house hunting, I watched House Hunters allll the time & now I'm kind of burnt out on it. Maybe it brings back stressful memories? :) Anyway, I love hummus & this sounds so good with the red pepper too!

  8. I actually...don't own a tv but watch it vigorously at hte gym! Real Housewives and Food Network for me! I love roasted red pepper anything...this sounds dreamy.

  12. Meg, I just read your comment about the recipe of mine you tried tonight, but is funny because we had one of yours last night! We had the socca again, which out of the socca recipes I've tried it is my favorite. So prefect for a busy weeknight dinner! Also, I tried a couple times to leave a comment on your last post and it wouldn't let me.
