Broccoli Pesto





 Enjoy.

Inspired by: Two Eat Philly's Broccoli Pesto

4 medium stalks broccoli, chopped into florets
1/2 tbsp olive oil + 1/4 tsp
2 oz parmesan cheese, shredded or cut into small pieces
pinch of salt
juice from 1/2 lemon
1 clove of garlic

Steam broccoli in the microwave or on the stove top
Reserve some steaming water to thin pesto
Microwave peeled garlic cloves in 1/4 tsp olive oil for 30 seconds to soften and take some of that raw garlic tasted away
Combine everything in food processor
Pulse until it starts to combine then leave on until smooth
Scrape sides as necessary
Use steamer water to thin pesto to desired consistency

Servings 4
Per serving (a heaping 1/2 cup) 100 calories

    1. No, it doesn’t really taste anything like a normal pesto but it certainly packs a flavorful punch with the garlic and parmesan and just a slight hint of broccoli. I would compare it more to a very thick broccoli and cheese soup that you can put on anything. That sounds less appetizing than I wanted it to but it is really a delicious recipe (if you like broccoli!) that makes a ton of food.
