Black bean brownies have been around for awhile but I had never made them (I was rather skeptical that beans could be made into dessert). Let me tell you, I wish I had been making these forever. I got this recipe from Busy But Healthy and added flax seeds for some crunch. These are seriously delicious straight out of the oven but the flavor and fudge-y texture improve everyday, if there are any leftover! To make a perfect snack spread peanut butter on top or serve with fresh berries for dessert.
2 tbsp flax seeds (optional)
1 can black beans, drained and rinsed well
1 heaping tsp instant coffee
2 tsp cinnamon
1/2 cup unsweetened cocoa powder
2 bananas, peeled
1/3 cup honey
3 tbsp Splenda
1 tbsp vanilla
1/4 cup instant oats
Preheat oven to 350F
Combine all the ingredients except the oats in a food processor and pulse until smooth
Stir in the oats and let the batter sit for 7-10 minutes
Pour batter into a greased 8x8 pan and bake for 35 minutes, or until a toothpick inserted in the middle comes out clean
Let them cool completely and then cut into 12 pieces
