So, it is fall and pomegranates are in season. They are so delicious and, as I am sure everyone knows, so healthful that I thought I would share a treat I like to make with them.

Crock Pot Turkey Chili
This chili is incredibly tasty, easy, inexpensive, and healthy! You don't need to put fatty beef in chili to make it 'chili' just add all the spices you love and you'll forget that you used ground turkey (or make it vegetarian). Hearty, satisfying, and pure comfort food. Mix it all up in the morning put it on low and forget about it until dinner...Enjoy

Enchiladas
Zucchini Crisps
These will make a vegetable lover out of you or anyone you feed them to. They are easy to prepare and you might already have all of the ingredients you need to make them in your fridge and pantry. You can adjust the seasoning in them to your liking, they are versatile, easy, and delicious (might I add healthy too).
Easy Baked Salmon
This recipe could not be any easier. Salmon is so wonderful on its own that you barely need to add anything to it. The ingredients in this recipe are a simple accent to it's light healthy taste. Serve it with steamed vegetables and brown rice or orzo for an easy delicious meal.

Spicy Shrimp Scampi
This one dish wonder is a lighter version of the very popular and overly buttery shrimp dish. Eventhough it lacks the normal stick of yellow stuff per serving it does not disappoint on flavor; with the addition of red pepper and tons of garlic you won't miss the grease. Cooking the shrimp with lemon slices adds a very fresh and clean taste from the essential oils in the peel that you wouldn't get by just adding the juice.

Cheesy Pasta Casserole
*See updated recipe here: Cheesy Broccoli and Pasta Casserole
This dish is so cheesy and hearty you won't think of it as a healthy meal but making it with whole wheat pasta and mixing in broccoli and mushrooms makes it healthier than you'd imagine. It does take awhile and requires a few pots and pans so it is good to start it early and clean up as you cook.
